Regenerative Egg Recipes

A single large egg can contain approximately 6 grams of protein, plus higher omega-3 levels. Omega-3 fats are associated with heart & brain health.

Rolled-Up Omelet

1 pound pork sausage
8 large eggs
4 ounces cream cheese
½ cup heavy cream
1 tsp salt
½ tsp pepper
½ tsp garlic powder
1 cup cheese (whatever kind you have on hand)
Hot sauce (to drizzle on the top), if desired
Fresh basil leaves to garnish and sprinkle on the top

Instructions:
In a medium skillet over medium heat, cook the sausage until browned. Drain the grease.
Preheat oven to 350F and line an 11x17 inch rimmed baking sheet with parchment paper, leaving an overhang for easy removal. Grease the parchment.

In a blender, combine the eggs, cream cheese, whipping cream, salt, pepper, and garlic powder. Blend until smooth. Pour mixture into prepared baking pan and spread to the edges.

Bake 15 to 18 minutes, until omelet is just cooked through. Remove and immediately sprinkle with 1 cup of the cheese. Sprinkle with sausage. Drizzle with hot sauce, if desired.
You’ll need to let the omelet cool for a few minutes. Then, working from one of the shorter ends, roll omelet up tightly. Use the parchment paper to help lift the omelet to roll it. Slice and garnish with additional hot sauce and basil, if desired.

Haven Acres Spinach Three Cheese Egg Bake

1 dozen Haven Acres Regenerative Eggs

1/4 cup melted Kerry Gold butter 

2 cups shredded mozzarella and asiago blend

1/4 cup Feta cheese crumbles

1 t. garlic salt

2 t. basil 

1/2 t. cracked black pepper

1/2 lb. organic pork sausage, browned

1 cup organic milk or half & half

1 cup spinach diced 

Begin by preheating oven to 350 degrees. Brown 1/2 lb. pork sausage until completely cooked (no pink), and drained. Crack 12 Haven Acres eggs into large mixing bowl. Whisk well. Add in melted and cooled butter, milk, seasonings, cheeses, and mix well without over beating. Mix in spinach - pick off stems and dice into pieces. Pour into greased 9x13 glass pan. Bake at 350 for 45 minutes or until middle springs up and it cooked through.
